Absolutely Fabulous Greek Dressing

IMG_0213 As unoriginal as this sounds, I love a big salad almost every day. My typical lunch or dinner salad is a powerful bowl of of antioxidant-rich vegetables and legumes that leaves me feeling energized, refreshed and comfortably full. The problem that I've struggled with in the past has been dressing. In the 90's, it was a smattering of lowfat-types. Yuck! But even as I've liberalized my diet to include more healthy fats, it's tough to find a bottled dressing that doesn't have a lot of artificial ingredients. Check the label of your favorite bottled dressing...it might have MSG, artificial flavorings, sugar, gums and preservatives. Do you need to add that to your beautiful salad? Absolutely not! This Absolutely Fabulous Greek Dressing comes from AllRecipes, and is just as it is named. It compliments and  brings out the flavor of your fantastic salad without anything artificial that your nutritious bowl doesn't need. At a recent dinner party, I had adults and kids asking for more. Absolutely Fabulous Greek Dressing

This recipe is adapted from the original to make a one-bottle portion
  • 1 cup of olive oil
  • 2 t garlic powder
  • 2 t oregano
  • 2 t basil
  • 1.5 t pepper
  • 1.5 t salt
  • 1.5 t onion powde
  • 1.5 t Dijon mustard
  • 1 cup of red wine vinegar
  1. In a large mason jar or salad dressing mixer, mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, and Dijon mustard. Pour in the vinegar, and mix vigorously until well blended. This can be stored tightly covered at room temperature.
