Air Fryer Coconut Shrimp

As a dietetic intern I try my best to eat healthy meals, but I enjoy fried foods every now and then. I have discovered a piece of kitchen equipment that has changed how I cook. The air fryer is a new craze that many people are curious about. It works by rotating hot air around food in order to cook it. The best part is that no oil is needed! This leads to lower-fat meals that are easier and safer to clean up. I have cooked many foods in my air fryer, including chicken tenders, sweet potato fries, onion rings, and chicken wings, but one of my favorites is coconut shrimp. The sweet coconut combined with the crunch from the air fryer delivers a delicious dinner, all in 5 to 10 minutes!

Air Fryer Coconut Shrimp
Serves: 4 servings
  • ⅓ cup rice flour (or all-purpose flour)
  • 1 tablespoon sugar (optional)
  • 1 teaspoon cayenne pepper
  • ½ teaspoon salt
  • 1 egg
  • 1 tablespoon water
  • 1 cup sweetened flaked coconut
  • ¾ cup bread crumbs
  • 1 pound jumbo shrimp, peeled and deveined, with tail
  1. Preheat air fryer to 360 degrees F.
  2. In a shallow dish, combine flour, sugar, cayenne pepper, and salt; mix well.
  3. In a small bowl, beat together egg and water.
  4. Place coconut an bread crumbs in another shallow dish.
  5. Coat shrimp with flour mixture, then with egg mixture.
  6. Roll in coconut mixture, pressing mixture firmly onto shrimp to coat completely.
  7. Cook in air fryer 5 minutes or until shrimp are done and coconut is golden brown.
