Coconut Chocolate Chip Steel Cut Oats

Our best friends visited us from Chicago last weekend. Since we have young children and a party of 9 all together, going to restaurants is not usually on the agenda when we get together. We all enjoy cooking, eating, celebrating and enjoying each other’s company so much…why would we ever go out? We couldn’t decide which meal was our favorite, but all agreed that food simply tastes better when someone else prepares it for you, especially with a little love. That brought to mind the steel cut oats that have become a family favorite in our house. We put the oats and water in our Zojurushi rice cooker  the night before, and almost like magic, a steamy, perfectly-cooked batch of oats is ready for us as we are rolling out of bed.  It’s like little, magic, oat-cooking fairies prepared them overnight, with a little bit of love, and that makes them all the more delicious and enjoyable.  This is my daughter Amelia’s favorite way to eat them: with a sprinkle of coconut sugar, mini chocolate chips and coconut flakes.  At less than 240 calories, this provides almost 6 grams of cholesterol-lowering fiber as well as 13% of your daily value for iron.

Ingredients
  • ¾ cups cooked steel cut oats (for cooking instructions, click here)
  • 1 teaspoon coconut sugar (may substitute brown sugar or other sweetener of choice)
  • ½ tablespoon mini chocolate chips, such as Enjoy Life brand
  • 1 teaspoon unsweetened shredded coconut
Instructions
  1. Place a heart-healthy portion of ¾ cups of cooked steel cut oats in a bowl. Sprinkle with coconut sugar, mini chocolate chips and coconut. Enjoy!
Notes
If you have a rice cooker, you can reduce cooking time to almost zero! Just place 1 part steel cut oats and 2 parts water in the rice cooker, use your timer and choose the porridge setting (or brown rice setting, if you don't have a porridge setting). It will be perfectly waiting for you when you wake up.
