Have you ever considered lentils a fun snack food? I certainly hadn’t had before last fall, when I tasted these little bites of deliciousness at FNCE in October. The American Pulse Association and the USA Dry Pea & Lentil Council have teamed up and are promoting 2016 as the year International Year of Pulses. They are asking that we take the pulse pledge and commit to eating more dry peas, beans, lentils and chickpeas because they possess an amazing nutritional profile, while being a sustainable and affordable food source all over the world. Typically, I don’t need incentive to eat more from this amazing food group, as hummus, dry peas and beans and lentils make their way into many of my lunches and dinners. However, this tasty power bite recipe has me enjoying lentils as a 3pm snack and helping my non-lentil-loving 11 year-old change her tune. I hope you enjoy them too.

Ingredients
  • ¼ cup dry, uncooked lentils
  • ¾ cup old fashioned oats
  • 2 Tablespoons honey
  • 1 Tablespoon pure vanilla extract
  • ¼ cup peanut butter
  • ¼ cup mini chocolate chips
Instructions
  1. Sort lentils for any possible foreign material and rinse well. Boil approximately 10 minutes, until lentils are cooked, but not mushy. Drain and set aside.
  2. In a separate bowl, mix oats, honey, vanilla and peanut butter until well-incorporated. Mix in chocolate chips. Mix in lentils last to mix in with minimal breaking up of lentils.
  3. Place about ½-2/3 of the mixture in a food processor and mix until combined. Return the combined mixture back to the bowl with some of the chunkier mixture, and mix well.
  4. It should now be a good consistency to form into 1 ounce balls. Place them on a cooking sheet and chill in the refrigerator. Store in refrigerator, or freeze if not planning to eat within a few days.
