Superfast Arugula Flatbread Pizza


This is a great way to get a serving of greens at lunch. You can use any leafy green, such as spinach, baby kale or a spring mix, but I prefer the peppery taste of baby arugula whenever I have the choice. You can try this with any whole grain flatbread, but I prefer the perfect, chewy texture of M.E. Bakery’s Mediterranean whole wheat variety, which only has 5 ingredients! Try this melty and satisfying pizza for lunch or dinner anytime.

Serves: 1
  • 1 whole grain flatbread, such as M.E. Bakery Mediterranean Whole Wheat
  • ⅓ cup of marinara sauce, such as Rao’s Homemade
  • 1 to 1.5 cups of fresh baby arugula or other leafy green
  • ¼ cup of shredded mozzarella
  1. Preheat oven to 400° F
  2. Place flatbread on a pizza pan or cookie sheet
  3. Top with marinara sauce, arugula and shredded cheese
  4. Bake for 10 minutes or until cheese is melted and browned to your liking
